- Preheat your oven to 375°F (190°C).
- In a small bowl, mix together both mustards, garlic powder, olive oil, salt, and pepper until well combined.
- Place the salmon fillets on a baking sheet lined with parchment paper or lightly greased.
- Brush 1/3 of the mustard mixture evenly over the top of each salmon fillet.
- Put 1/3 of the mustard mixture on the potatoes and toss. Repeat with the remaining mixture and vegetables.
- Bake the salmon and vegetables in the preheated oven for about 12-15 minutes and potatoes for 22-25 minutes, until the salmon flakes easily with a fork and potatoes are cooked.
- Splatter the sauce onto the plate, place salmon, potatoes, and vegetables and garnish with chopped fresh cilantro.
