Horseradish Encrusted Sea Bass

  1. Rinse fish and pat dry.
  2. In one bowl, mix heavy cream and horseradish.
  3. Put breadcrumbs in another bowl.
  4. Dip fish into horseradish, then into crumbs, and then into the horseradish again.
  5. Heat oil and fry fi sh for 2 minutes on each side, carefully turning the fi sh.
  6. Remove fi sh and place on plate.
  7. Remove most of the oil from frying pan and return pan to heat.
  8. Add chopped shallot and sauté for 2 minutes.
  9. Add wine and bring to boil, letting it reduce by half.
  10. Return the fi sh to the pan, cover, and let fi sh heat in sauce for 2 minutes.
