- Fill a cast iron skillet or frying pan with oil and heat until 350°F.
- While the oil is heating, add the catfish to a bowl.
- In a separate bowl, whisk together the eggs and mustard until completely combined.
- Pour the egg mixture over the fish, fully covering all sides, and set aside.
- In a clean bowl, whisk the cornmeal, flour, season salt, black pepper, garlic and paprika together.
- Coat fish in the dry mixture and shake off any excess before adding it to the skillet or frying pan.
- Working in batches to avoid overcrowding, fry the fish until golden brown on both sides. This is approximately 4 minutes per side, depending on the thickness of the fish.
- Place fried fish on paper towel to drain any excess grease before serving.
