Colcannon Twice Baked Potato Bombs

  1. Rub the potatoes in baking grease and bake at 425°F for one hour
  2. In a pan, cook shallots with bacon grease and Mister Mustard, until translucent.
  3. Add cabbage to the pan and continue to cook until fully incorporated and cabbage has softened.
  4. Cut an oval into the top of the potatoes and scoop the insides into a large bowl.
  5. Add milk, butter, sour cream, the cabbage mixture, bacon bits and mozzarella to the bowl and fully combine.
  6. Stuff the mixture back into the potatoes and top with a small amount of cheese and bacon.
  7. Bake the filled potatoes at 400°F for 20 minutes.
  8. Repeat as necessary
