This Clark County Fair 2018 Dish of the Day winner was created by Becky Bishop.
- Cut up potatoes and cook until fork tender. Drain and put into a large bowl.
- Add salt and vinegar and combine gently with a rubber spatula. Allow to cool slightly for about 15 minutes.
- Combine mayo, sour cream and wasabi mustard in a small bowl.
- Once the potatoes have cooled, fold in with a rubber spatula.
- Top with crispy bacon, chopped green onion, and paprika.
