Bacon Potato Salad

This Clark County Fair 2018 Dish of the Day winner was created by Becky Bishop.

 

  1. Cut up potatoes and cook until fork tender. Drain and put into a large bowl.
  2. Add salt and vinegar and combine gently with a rubber spatula. Allow to cool slightly for about 15 minutes.
  3. Combine mayo, sour cream and wasabi mustard in a small bowl.
  4. Once the potatoes have cooled, fold in with a rubber spatula.
  5. Top with crispy bacon, chopped green onion, and paprika.
